A <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0048969722016321\">2022 research study<\/a> ranked canola and sunflower oil as the most climate-friendly options. But it\u2019s not just about the type of oil\u2014it\u2019s also about where the crops are grown, per <a href=\"https:\/\/www.nytimes.com\/2025\/06\/02\/climate\/which-cooking-oil-is-best.html?smid=nytcore-ios-share&amp;referringSource=articleShare\"><span class=\"s1\">The New York Times<\/span><\/a>.<\/p>\n<p class=\"p1\">Oil crops take up nearly 20 percent of all farmed land worldwide, according to <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0048969722016321\"><span class=\"s1\">ScienceDirect<\/span><\/a>. That makes the location of production crucial. In North America, most canola grows in the prairie ecozone, where the soil has \u201ca relatively low storage potential,\u201d said Stephen Ramsden, an agricultural economist at the University of Nottingham. In other words, the soil there stores less carbon.<\/p>\n<p class=\"p1\">Even so, canola and sunflower oil still beat most other oils in terms of <a href=\"https:\/\/foodprint.org\/blog\/cooking-oils-and-sustainability\/\">carbon footprint<\/a>. Growing these crops releases less carbon and does less damage to the land\u2019s ability to absorb emissions.<\/p>\n<blockquote>\n<p class=\"p1\">\u201cYou\u2019re not really giving up that much,\u201d Ramsden said.<\/p>\n<\/blockquote>\n<p class=\"p1\">Soybean oil, while super common, doesn\u2019t perform as well for the environment. Much of the global soy supply comes from deforested regions of the Amazon, which contributes to major ecological loss.<\/p>\n<blockquote>\n<p class=\"p1\">\u201cMost bottles in stores nationwide that have \u2018vegetable oil\u2019 labels are usually soybean oil,\u201d said Eric Decker, a food science professor at the University of Massachusetts Amherst.<\/p>\n<\/blockquote>\n<p class=\"p1\">However, soy farms in the U.S. produce lower emissions, research shows. So if your vegetable oil contains only U.S.-grown soy, it\u2019s actually one of the greener options on the shelf.<\/p>\n<p class=\"p1\">Beyond soy, experts rank oils from best to worst for the environment like this: olive, coconut, soy (from deforested land), and peanut oil. Researchers are also exploring alternatives\u2014like camellia plants\u2014which could help cut greenhouse gas emissions, according to <a href=\"https:\/\/www.newscientist.com\/article\/2449443-camellia-oil-could-be-the-greenest-cooking-oil-and-the-healthiest\/\"><span class=\"s1\">NewScientist<\/span><\/a>.<\/p>\n<p class=\"p1\">Ultimately, any plant-based oil is still better for the climate than animal fats.<\/p>\n<blockquote>\n<p class=\"p1\">\u201cWe need to get the calories from somewhere,\u201d said Robert Beyer, a researcher at Cambridge University who worked on an oil comparison study. \u201cIf you reduce vegetable oils, and suddenly everybody starts cooking with butter or goose fat or something, environmental impact will definitely go through the roof.\u201d<\/p>\n<\/blockquote>\n<p class=\"p1\">So next time you\u2019re scanning the grocery shelf, don\u2019t just check for \u201corganic.\u201d Look at the fine print\u2014and think about where that oil came from.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>If you\u2019re trying to cook more sustainably, your choice of oil might could have a bigger impact than you think.
